Finding the best Chewy Paleo Chocolate Chip Cookies recipe is essential for Paleo life, right?
I am guessing grandma’s cookies are not gluten-free or Paleo, though. Bummer.
To begin the search, I opened my go-to Paleo baking cookbook, Elena’s Pantry Almond Flour Cookbook.
She has a terrific recipe for Snickerdoodles that has a soft, chewy texture that just melts in your mouth. Mmmmmm….
These cookies were so delicious that we were inspired to adjust it for our Paleo chocolate chip cookies.
The recipe for the BEST Chewy Paleo Chocolate Chip Cookie is so easy that my kids make it by themselves all the time. (I just help with the oven part!).
We can literally have warm cookies to enjoy in about 15 minutes from start to finish. Dangerously easy and SO yummy! 🙂

Since the BEST Chewy Paleo Chocolate Chip Cookies are made with almond flour, they offer a healthy amount of protein and fat. We aim to start our day with protein and fat to help keep our blood sugar stable.
These cookies also have:
- NO white sugar or cane sugar
- Healthy fat
- NO gluten or grainsAt our house, that combo makes these cookies a healthy breakfast or snack option any day!
Should you use butter or coconut oil?
Of course, if you want dairy-free cookies, you can use refined coconut oil in place of butter as a terrific option. Coconut oil has many health benefits – including a brain boost)!
We have found that refined coconut oil doesn’t have any coconut flavor and will result in a deliciously chewy cookie.
We often use organic butter and slightly under bake the cookies to maintain the chewy cookie texture we like best.

We have found that Costco has several of the ingredients we need for the BEST Chewy Paleo Chocolate Chip Cookies.
Costco doesn’t carry arrowroot powder, but we have left out the arrowroot powder with success. The cookies are just a touch more dense, but still yummy.

The BEST Chewy Paleo Chocolate Chip Cookie Recipe
(gluten-free, grain-free, dairy-free, egg-free, and sugar-free)
5 cups of super-finely ground almond flour (Find at Costco or Amazon)
1 cup of arrowroot flour
1 tsp sea salt (we like this one)
2 tsp baking soda
4 T of vanilla (this is our favorite brand)
1 cup of maple syrup (can substitute honey or agave)
12 T of melted butter or refined coconut oil (see note)
1 bag of Enjoy Life Chocolate Chips
Easy Peasy Directions:
1. Preheat oven to 350 degrees (or 325 degrees convection).
2. Line cookie sheet with unbleached parchment (or use these healthy non-stick pans I adore!) .
3. Melt butter in a separate pan.
4. Mix almond flour, salt, and baking soda with a whisk in a large bowl.
5. Add maple syrup, vanilla, and melted butter. Mix well.
6. Stir in chocolate chips.
7. Scoop out dough and roll into a ball. Place on prepared cookie sheet and slightly flatten cookies to desired size. Be sure to leave some space for expansion.
TIP: We like to use these stainless steel ice cream scoops to get evenly sized cookies.
8. Bake at 350 (or 325 in convection ovens) for 7 minutes for chewy cookies.
